Food Consumption is My Function

Today’s Farmer’s Market purchases. Tonight’s dinner.
I was only familiar with the beets, the red ones even.  The rest was experimental.  The veggies on the right side were coined as “alien vegetable heads” and were similar to radishes.  And the greens with flowers were reminiscent of the greens from an awesome dinner had at Jitlada.  The greens from Jitlada were much better though.  But, I will say, chopping up those “alien vegetable heads” with minced jalepenos and soaking them together in rice wine vinegar and lime juice made for a surprisingly refreshing dish.  As for the beets, well, you can’t ever go wrong with roasting them.  I tried a different method—foiled each one and placed them in the oven at 400 degrees for an hour and unfolded them after they cooled—but preferred my traditional method of peeling, chopping and seasoning them first before placing in the oven more.  I sprinkled them with a little salt and pepper and crumbled feta after as bonus.
Overall, it wasn’t bad.  Not personally my best, but at least super healthy.  And, of course being me, I am now going to bake a couple chocolate chip cookies and help myself to some ice cream.
Hope you all had a happy Sunday supper of sorts! :)
